Walleye, hands down. Although, in clean water, all the fish pretty much taste the same. In the cold, clear, clean water of the north, northern pike taste the same as walleye, which taste the same as the crappie, which taste the same as the perch.

I couldn't agree more. walleye is my favorite, but in nice clean cold water just makes everything taste better

One thing that does make a little difference is the age of a fish. The older the fish, usually, the tougher the meat.

That's true. The younger they are the better they taste.

In most cases, yeah. It's true with brook trout, but with Atlantic salmon, they need to be "aged" with their time in seawater.

Me and buddy just went on 10 mile backpacking trip to a remote lake where we caught 76 fish; mostly crappie. They tasted great! My favorite is crappie as well, but I usually catch black crappie. Is there really much of a difference between white crappie and black crappie? I've never tried walleye before, but from what I've heard it is pretty tasty as well.

Brook trout, definitely. I was at the river yesterday evening and got a couple. When I picked up the wife at 10:00, I put on some fish and chips with sliced up potatoes, not fries from the freezer aisle of the groc store.

Pan size trout, mmmmmmmmmmmm. I moved to New Brunswick from Newfoundland and took a big liking to pickerel. Wrapped in foil, seasoned and cooked over the fire.

Gotta love perch......

theres not much different taste between white or black crappie but age and lake environment takes into counter how the fish tastes

I love walleye and pike. I also love perch although i only ever ice fish for them, i'm not sure about them by mid summer. smallies also taste great if caught from cooler water. Gotta love fresh salmon and all the trout's.As far as eating size goes i like to eat 'teenagers'. if you wanted to eat a human you'd choose a nice strong new muscle toned early 20 something, nice lean meat and not some saggy tough old granny, the same goes for fish. (weird analogy i know, but it works for me!)
